Ingredients

(Makes 2 rolls)

  • 2x 3oz skinless salmon steaks
  • some short grain rice, cooked and cooled
  • 1 spring onion
  • 1 ripe avocado
  • a little freshly grated horse radish
  • 1 tablespoon finely chopped bell pepper
  • 2 teaspoons wild charlock seeds (or other mustard seed)
  • 4 tablespoons of lacto-fermented wild green*
  • Marinade:

  • juice of 2 pink grapefruit
  • juice of 2 limes
  • juice of a large lemon
  • 1 medium sized red onion finely chopped
  • some finely chopped fresh ginger
  • some finely chopped garlic
  • some finely chopped fresh chilli
  • 1-2 table spoons liquid aminos/soy sauce or similar
  • Sun-dried tomato paste
