Ingredients
(Makes 2 rolls)
- 2x 3oz skinless salmon steaks
- some short grain rice, cooked and cooled
- 1 spring onion
- 1 ripe avocado
- a little freshly grated horse radish
- 1 tablespoon finely chopped bell pepper
- 2 teaspoons wild charlock seeds (or other mustard seed)
- 4 tablespoons of lacto-fermented wild green*
Marinade:
- juice of 2 pink grapefruit
- juice of 2 limes
- juice of a large lemon
- 1 medium sized red onion finely chopped
- some finely chopped fresh ginger
- some finely chopped garlic
- some finely chopped fresh chilli
- 1-2 table spoons liquid aminos/soy sauce or similar
- Sun-dried tomato paste
